Atta Halwa (Whole Wheat Pudding)

This traditional Indian dessert is comforting, delicious, and surprisingly simple to make with Sahaj Bhog Atta.
Ingredients:
1 cup Sahaj Bhog Atta
1 cup ghee (clarified butter)
1 cup sugar
3 cups water
½ teaspoon cardamom powder
A few chopped nuts (almonds, cashews, raisins) for garnish (optional)
Instructions:
In a heavy-bottomed pan or kadhai, heat the ghee over medium-low heat.
Add the Sahaj Bhog Atta and roast it on low to medium heat, stirring continuously, until it turns golden brown and aromatic (this may take about 10-15 minutes). Be patient and keep stirring to prevent burning.
While the atta is roasting, in a separate saucepan, combine sugar and water. Bring it to a boil and let it simmer for a minute until the sugar dissolves completely.
Once the atta is nicely roasted, slowly pour the hot sugar syrup into the pan while stirring continuously. Be careful as the mixture may splutter.
Continue to stir until all the water is absorbed and the halwa thickens and starts to leave the sides of the pan.
Stir in the cardamom powder.
Garnish with chopped nuts (if using) and serve hot.
